Despite the fact that polyfloral wood honey is gathered mainly from trees and bushes, it can be referred to the “herbal” type.

Honey gathered in wood can be of different colors. There are some shades of amber or brown, light yellow, golden. But one common tendency is obvious: as a rule, wood honey is darker than herbal honey thought these two types have almost the same taste. Like herbal honey, wood honey has a slightly tart aftertaste. If in the place where it is gathered coniferous trees prevail, honey taste is subtly sour. Initially wood honey can have various consistence — from liquid to thick paste-like. Crystallization process goes on slowly, like in other polyfloral types. As a result the mass turns uneven, with lots of small crystals.

This honey type is very aromatic, the aroma is quite specific but pleasant. Like the taste, the aroma is rich in tart notes. However, like all other properties, this one depends greatly on the place and plants used for nectar gathering.

To get wood honey apiaries are organized on forest clearings and borders. Nectar is gathered here from all the plants blooming in the forest, be it herbs, bushes or trees. The main gathering stage begins at the beginning of July and ends in September. But in some places it can start earlier too. Honey gathered in spring is considered to be the most useful. Lots of forest plants bloom in this period. Among trees these are mountain ash, basswood, maple, bird cherry, willow. Hawthorn, raspberry, strawberry, thyme, oregano and many others belong to nectar-bearing herbs and bushes. Precise composition depends, of course, on local peculiarities, and their proportions can differ depending on the year. But this honey is always rich in vitamins А, В1, В2, С, РР, К and Е.

Regular consumption of wood honey promotes general improving of health. It is recommended for use as a general health-improving, analgetic, preventive drug; it has a strong immune-stimulating action, increases hemoglobin level, improves the functions of blood-vascular, digestive and respiratory systems. This honey is a good antibacterial and anti-inflammatory agent. If consumed dissolved in water before going to bed, it calms down nervous system and helps to fall asleep. Besides, when consumed regularly, general improvement of mood and tone is observed.

An unambiguous reason to prohibit its consumption is individual intolerance to the components of this product and allergic reactions. Contra-indications for the consumption of any honey type are stomach diseases, i.e. gastritis, ulcer, colitis, etc. At least, this product must not be over-consumed when these diseases are in their acute phase.

Wood honey has similar contraindications as any other type. Consequently, if other honey types cause no harm to you, you can also consume wood honey with no fear. Consumption of any honey type in abundance can lead to negative consequences. An allergy or product intolerance can develop, you can acquire diabetes mellitus or damage your teeth.
